Easy Freezer Fudge 

The perfect snack that satisfies the sweet tooth and provides plenty of healthy fat for energy and nourishment. Try both flavours or experiment with your own add-ins!


Yield: 18 servings

INGREDIENTS

  • ⅓ cup coconut oil

  • 1 cup Nuts to You seed or nut butter

  • ⅓ cup maple syrup

  • Flavour options:

    • 3 Tbsp cocoa powder (try with Nuts to You Sunflower Seed Butter)

    • Zest and juice of 1 large lemon (try with Nuts to You Tahini)

  • Toppings of choice (flaky sea salt, toasted seeds or coconut, etc.)

INSTRUCTIONS

  1. Line a regular-sized (8½” x 4½”) loaf pan, or similar-sized container, with parchment paper.

  2. Melt all the ingredients together in a double boiler or in a mixing bowl set over a simmering pot of water (alternatively, in a microwave or in a pot over low heat). Stir until smooth and homogenous.

  3. Pour mixture into the prepared loaf pan.

  4. Sprinkle with optional toppings and place in the freezer for 2 to 4 hours until firm. 

  5. Cut into 18 squares using a sharp knife dipped in warm water. Transfer to a container for storage.

  6. Store in the freezer for up to 3 weeks for best results.
