PB&J Baked Oats

Want to eat cake for breakfast? These blended baked oats are healthy and filling, and they hide an ooze of peanut butter and jam that is sure to get your day off to the right start!


Yield: 1 generous serving

INGREDIENTS

  • ½ cup rolled oats

  • ½ banana (or ¼ cup applesauce)

  • 1 Tbsp maple syrup

  • 1 small egg

  • ¼ tsp baking powder

  • ¼ tsp cinnamon

  • ¼ cup milk of choice

  • 1½ Tbsp Nuts to You Peanut Butter Smooth

  • 1 Tbsp jam of choice

  • Icing sugar for garnish

INSTRUCTIONS

  1. Preheat oven to 350ºF and lightly grease an oven-safe dish big enough for a large serving of oatmeal.

  2. Blend oats, banana, maple syrup, egg, baking powder, cinnamon and milk in a blender until smooth.

  3. Pour ⅔ of the batter into the baking dish. Gently spoon Peanut Butter and jam onto the centre of the batter, then pour over the remaining batter.

  4. Bake for 30 to 40 minutes, or until a toothpick comes out clean. Dust with icing sugar and eat while warm.
