Miso Peanut Butter Cookies with Brown Butter


Are you a fan of salty sweet treats? You’ll love these umami-filled peanut butter cookies with the nuttiness of brown butter and miso paste!
Yield: 12 large cookies
INGREDIENTS
- 1 cup all-purpose flour
- 1 tsp baking soda
- ½ cup unsalted butter
- ½ cup Nuts to You Peanut Butter (Smooth or Crunchy)
- 3 Tbsp miso paste
- ¾ cup packed light brown sugar
- 1 tsp vanilla extract
- 1 egg
- ¼ cup white or demerara sugar, for coating
INSTRUCTIONS
- In a medium pot on medium heat, cook the butter until it foams and then browns, about 5 minutes. Make sure to stir often with a wooden spoon and to scrape the bottom of the pot to avoid burning the milk solids. Pour into a large mixing bowl and set aside to cool for 5 minutes.
- In another mixing bowl, combine flour and baking soda, and set aside.
- Once butter has cooled, whisk in peanut butter, miso, sugar and vanilla. Then add the egg and mix quickly.
- Sift in the flour mixture and fold until incorporated. Put the dough in the fridge to chill for 1 hour.
- Preheat oven to 325°F and line 2 baking sheets with parchment paper.
- Portion the cookie dough out; each cookie should be two rounded tablespoons. Roll in sugar and arrange on baking sheets. Flatten each cookie with a fork in a cross pattern.
- Bake for 10 to 12 minutes, until just the very edges are golden brown. Let cool for 5 minutes and enjoy!
