Cashew Caesar Dressing
When you’re craving caesar salad, try our tangy plant-based dressing. You’ll never guess it’s made with our creamy Cashew Butter.
Yield: 3/4 cup
INGREDIENTS
¼ cup Nuts to You Cashew Butter (Tahini works as an alternative)
2 Tbsp lemon juice (about ½ large lemon)
2 Tbsp olive oil
2 Tbsp hot water (add more for thinner consistency)
1 small garlic clove, minced
1 Tbsp nutritional yeast
2 tsp Dijon mustard
2 tsp capers
1 tsp Worcestershire sauce, soy sauce or tamari
Pepper to taste
INSTRUCTIONS
Whisk together all the ingredients until smooth. Taste and adjust seasonings.
Toss with romaine lettuce and top with bacon crumbles and croutons, if desired.
Dressing keeps for five days in the fridge.
