Red Beet Hummus

It looks stunning and tastes wonderful. What’s not to love about this bright pop of colour on your table?!


Yield: 1 1/2 cup

INGREDIENTS

  • 1 cup organic chick peas, cooked

  • 1 large organic beet

  • 4 Tbsp Nuts to You Organic Fair Trade Tahini

  • 1 garlic clove, minced

  • Juice of 1 lemon

  • ½ tsp miso or sea salt to taste

  • 2 Tbsp extra virgin olive oil

  • Paprika, turmeric, and pepper to taste

INSTRUCTIONS

  1. Peel and chop beet into cubes.

  2. Heat water in a medium-sized saucepan, and boil beet until tender.

  3. Put all ingredients, except spices, in a food processor or blender, and pureé until smooth.

  4. Pour into a serving bowl and place in fridge for a few hours to let the flavours blend.

  5. Sprinkle with paprika, turmeric and pepper.

  6. Garnish with chopped roasted walnuts, flax seeds, sour cream, and fresh chopped oregano, and serve with toasted pita bread.
