Salted Maple Cereal Squares

Step aside granola and marshmallow bars! These squares make a great snack to satisfy your sweet tooth and energize you for a busy work or school day.


Yield: 8 bars

INGREDIENTS

  • 2¼ cups rice cereal (or your favourite unsweetened cereal)

  • ½ cup chopped toasted nuts/seeds, chocolate chips or dried fruit*

  • ½ cup Nuts to You Sunflower Seed Butter (Tahini, Peanut Butter and Almond Butter work well too)

  • ¼ cup coconut oil

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • Pinch of salt for garnish

  • *Some recommended combinations include dried cherries or apricots with Nuts to You Almond Butter, chocolate chips with Nuts to You Peanut Butter, or toasted seeds with Nuts to You Tahini

INSTRUCTIONS

  1. Line a regular-sized (8½ x 4½) loaf pan with parchment paper.

  2. In a mixing bowl, combine puffed rice and nuts/seeds/chocolate/dried fruit. Set aside.

  3. Place the nut/seed butter, coconut oil, maple syrup and vanilla extract in a small pot. Heat on medium and stir until melted and well combined. Pour into the bowl of puffed cereal and mix well.

  4. Drop this mixture into the prepared loaf pan. Use a spatula or the back of a spoon to press and flatten the mixture into a flat layer.

  5. Sprinkle with salt and put in the refrigerator for 30 minutes or until firm.

  6. Cut into 8 bars and serve chilled!

  7. Will keep in an airtight container in the fridge for 5 days.
