Red Beet Hummus


It looks stunning and tastes wonderful. What’s not to love about this bright pop of colour on your table?!
Yield: 1 1/2 cup
INGREDIENTS
- 1 cup organic chick peas, cooked
- 1 large organic beet
- 4 Tbsp Nuts to You Organic Sesame Tahini
- 1 garlic clove, minced
- Juice of 1 lemon
- ½ tsp miso or sea salt to taste
- 2 Tbsp extra virgin olive oil
- Paprika, turmeric, and pepper to taste
INSTRUCTIONS
- Peel and chop beet into cubes.
- Heat water in a medium-sized saucepan, and boil beet until tender.
- Put all ingredients, except spices, in a food processor or blender, and pureé until smooth.
- Pour into a serving bowl and place in fridge for a few hours to let the flavours blend.
- Sprinkle with paprika, turmeric and pepper.
- Garnish with chopped roasted walnuts, flax seeds, sour cream, and fresh chopped oregano, and serve with toasted pita bread.
